Our talented bakers are up before the birds to bake delicious fresh breads and pastries, available in store 6 days a week.

Our family owned bakery is a buzzing local hotspot for great food and service with a smile.

Everything we make is created with fresh, wholesome ingredients and can often sell out! 

Our sandwiches and pastries are hand-made fresh each day. Order our specialty cakes for any special occasion either in store or now online. Our hot take away options are popular with the tradies as they make the perfect smoko or lunch.

Our Story

Established as East Griffith Bakery in 1995, situated in East Griffith, a natural thoroughfare which was missing the convenience of a neighbourhood bakery where you could drop in for your bread and milk, or order and pick up your smoko. Cakes are made to order and you can buy bread and pastries from the selection baked fresh daily.

Since becoming a company in 2005, Vaccari’s Bakery’s promise has always been: freshly made, quality ingredients and value for money.

Today Vaccari’s Bakery is a household name in the local area, with their sought after products quite often selling out. Their products are delivered fresh every day also to select local outlets within Griffith such as the local sports club, supermarket, coffee shop, corner store, takeaway and greengrocer. The bakery has recently undertaken a long-needed facelift to the shopfront with recently vacated adjoining building, and more re-modelling to come.

Our Team

Born in Griffith and raised in Bilbul, Jason pursued the baking trade at another well-known local bakery, completed an apprenticeship and trained while working at the Park Royal in Canberra for 12 months. Upon completing his course in Canberra, Jason returned to Griffith in 1995 aged 21 with a direction to start his own bakery, East Griffith Bakery in 1995, to showcase his newfound skills and talents. Jason’s philosophy has always been fresh, quality, and value, and above all else – service with a smile. Jason has successfully trained pastry chefs.

Jason is married to Wendy, and they have 3 children. His outside interests are his beloved St Kilda Football Club.

Also Born in Griffith and a Bilbul boy, Glenn followed in his older brother Jason’s footsteps and pursued the same career path. In 1995 at age 17, Glenn joined his brother as an apprentice baker at East Griffith Bakery to help shoulder the business. He is a talented and disciplined baker. Glenn has also successfully trained bakers.

Glenn is married to Erin, and they have 2 children. His outside interests are sport, fitness and karate.

Erin commenced her career at the bakery upon finishing Year 12 in 1998 with experience in retail and office management and a flair for language and art. Erin enjoys the company of others and counts her colleagues and customers as her extended family. Erin maintains Vaccari’s customer service, payroll, HR, accounts and enquiries.

Erin married Glenn in 2004 they have 2 children. Her outside interests include cooking, fitness and karate.

Wendy maintains Vaccari’s accounts, banking, and IT, and is also a talented edible image artist. Wendy is a significant part of Vaccari’s Bakery’s behind-the-scenes operations.

Wendy married Jason in 2000, and they have 3 children.
